General question about interfaith work

Hey everyone out there, can anyone help me with this question? Our academic guild (the Religious Education Association) has been struggling for a while with customary dates for our annual meeting. Our standard dates are the first full weekend in November every year, starting on Friday and ending on Sunday. We are aware that this is highly problematic for observant Jews, and have been thinking about moving our dates to a Sunday through Tuesday schedule. That option, however, makes a lot of other people uncomfortable because it cuts so deeply into the academic work week. What do you think? Does moving an academic meeting off of the Sabbath hold promise for supporting more Jewish participation? Do you have any experience with similar questions in your own contexts?
